Basil Marinated Chicken Thighs

I was looking for a simple marinade for chicken thighs that used fresh basil (since I have loads of it). I found this recipe on the Food Network that looked easy and delicious. I let the meat marinate for 6 hours but longer would be even better. This marinade gave the chicken such a wonderful flavor that my entire family loved. Southwestern Stuffed Portobello Mushrooms

I saw this recipe on Mommi Cooks and it looked so delicious I made it the next night for dinner. I loved the combination of flavors and textures in this dish, especially the sweet corn, spicy poblano pepper, and moist chicken. It was fairly simple to make and tasted really wonderful.
