Double Chocolate Pancakes with Strawberry Sauce
My kids found this recipe in my cookbook, Slim & Scrumptious by Joy Bauer, so we decided to make them together for their breakfast. The pancakes couldn't be easier to make and the strawberry sauce was quick and simple too. I adapted the recipe a bit by leaving out the flaxseed (I didn't have any) and I also used fresh strawberries instead of frozen. My kids LOVED these pancakes so much they ate

Caramelized Onion and Potato Frittata with Ham and Swiss
I was going to make a really simple frittata for dinner but I changed the ingredients once I saw this recipe on What's Cookin' with Mary? Caprese Baked Eggs AND a Giveaway (GIVEAWAY CLOSED - WINNER ANNOUNCED)
This is my new favorite breakfast. I know I say that a lot, but I really, really, mean it this time. This is a quick and simple recipe to prepare and it tasted so delicious! I loved the flavor of the basil with the cooked tomatoes and the over easy egg. I served my egg with a piece of rustic bread for dipping into the yolk. I highly recommend this healthy recipe.

Orange, Pineapple, and Banana Smoothie
My kids are hot, tired, thirsty, and hungry after swimming lessons so I recently made them a tasty smoothie to cool them down and fill them up after a long afternoon of swimming. I looked in the refrigerator to see what I had on hand and I found pineapple and orange juice; I also spied a ripe banana on the counter and decided to throw that in too. Asparagus, Tomato, and Spinach Frittata
I loved the Margherita Frittata so much that I made another frittata this week. I envisioned a veggie frittata with feta cheese but realized that I was out of feta. I used up the last of my asparagus and baby spinach that I had in the refrigerator and threw in a handful of cherry tomatoes. It was wonderful without the feta but I will add it next time because I love the salty and creamy flavor it

Margherita Frittata
I made this delicious frittata for breakfast recently and my husband and I both loved it. It was not only super simple to make but it tasted fantastic. Spicy Herbed Egg, Tomato, and Bacon Biscuit Sandwich
Yum, yum, yum. That's all I can think while typing this post. We had leftover biscuits and bacon from breakfast recently so I decided to use them to make an egg sandwich for lunch. I sprinkled the egg with some cayenne pepper, sea salt, and freshly cracked pepper then added a bit of fresh chives and thyme. I loved the flavor of the herbs on the spicy egg with the salty bacon and the fresh tomato

Herb Baked Eggs over Toast
I have been wanting to make this Ina Garten recipe ever since I first saw it. I had to adapt the recipe a bit to use what I had on hand and they turned out amazing. Parmesan Roasted Asparagus Topped with a Poached Egg
I just love eggs with asparagus lately and I can't seem to get enough of the combination. I made this recipe for lunch this week to use up the last few spears of asparagus that I had in the refrigerator. I simply seasoned the asparagus with olive oil cooking spray, sea salt, freshly cracked pepper, then topped it with some shaved Parmesan. I roasted the asparagus in the oven until it was fork

Baked Potato with Egg, Extra Sharp Cheddar, and Canadian Bacon
When I saw this recipe on Cathy's site, Wives with Knives, I knew instantly that I would be making it. While my kids enjoyed the Baked Cinnamon Mini Donuts with Maple Glaze, my husband and I gobbled up these amazing baked potatoes stuffed with extra sharp cheddar, Canadian bacon, an over easy egg, topped with green onions. Poached Eggs on Toast with Roasted Tomatoes, Caramelized Mushrooms, and Shaved Parmesan
I saw a picture of this recipe in a Real Simple magazine earlier in the summer. I didn't get the recipe but the picture stayed in my mind and I knew I would eventually try to recreate it. I finally did this last weekend for my husband and I and I am so glad I did. It was WONDERFUL! Bacon, Egg, and Toast Cups
I saw this recipe on the Martha Stewart website and decided to give it a try. She made several egg cups at once using a muffin tin but I was only cooking for myself so I used a Pyrex custard cup and only made one. It was really, really easy to make and tasted amazing. Canadian Bacon, Green Chile, & Cheddar Quiche with a Shredded Potato Crust

Banana Cake with Streusel Topping
I had three very ripe bananas to use up so my daughter and I decided to make a banana cake with streusel topping. I made the mistake of putting the cake in a small 8x8 pan instead of a 9x13 pan so the cake took an hour to bake. Next time I make this, and there will be a next time because my kids LOVED it, I will use the larger pan. It turned out very moist and flavorful - perfect for breakfast
