Caramelized Onion and Potato Frittata with Ham and Swiss

I was going to make a really simple frittata for dinner but I changed the ingredients once I saw this recipe on What's Cookin' with Mary? What goes better with eggs than caramelized onion, potatoes, ham, and cheese? This dish took a few extra minutes to prep but it was worth it! I loved the flavor combination - all of the ingredients just work really well together. My husband and I both REALLY

Tapenade Pork Chops

I immediately knew I would make this recipe when I saw it in the Everyday Food - July/August 2011 issue. I had leftover tapenade from my Grilled Tomatoes Tapenade recipe so I decided to make this pork for dinner. The recipe called for a smooth & creamy tapenade but I wanted to keep mine chunky for this recipe - I am so glad I did! I loved the tender and juicy pork with the olive crust - the

Pork Tenderloin Tacos with Tangy Slaw

I had a pork tenderloin to use up so I decided to make tacos. I found a recipe on the Food Network for a tangy slaw that looked good so I adapted it a bit and used it as a taco topper. The pork turned out tender, flavorful, and juicy and the slaw was tangy and crisp. The tacos were a big hit with my family and were gobbled up in no time. This was a fun variation of tacos and it went well with my

Oh my. This is really and truly my new favorite sandwich - it was messy but SO GOOD! What could be better than really tasty bread with soft and creamy avocado slices, crisp lettuce, sweet vine ripened tomatoes, salty bacon, and an over easy egg? I loved the combination of flavors and textures in this sandwich and I can't wait to make it again.B, L, T, A, E (Bacon, Lettuce, Tomato, Avocado, and

Pork Chops with Mushrooms, Dill, and Sour Cream Sauce

I saw this recipe on Closet Cooking and knew instantly I needed to make it. It reminded me of my Hungarian Mushroom Soup, which I LOVED, so I was excited to give this recipe a try. The pork turned out moist and tender while the sauce was tangy and so flavorful! I served the pork over whole wheat egg noodles that had been tossed with fresh baby spinach. The combination of flavors and textures in

Italian Sausage and Spinach Lasagna

Our dear friends just moved into a new home and while they have been busy painting, unpacking, and doing yard work, they haven't had a lot of time for cooking. I made this big pan of lasagna to help them out. Since they have been working so hard I decided to make this lasagna a little more hearty than I normally cook... they needed the calories since they were burning them off so quickly. I used

Blackened Pork Chops with a Pineapple - Mango Salsa

I was inspired by a dish I saw over at Jenn's Food Journey for spicy pork chops with a mango and pineapple salsa. I decided to use the blackened seasoning from my Blackened Flank Steak for the pork chops because I didn't have time to marinate them. The spicy pork tasted fantastic with the sweet and spicy salsa. I used much less seasoning on the kids pork so it wasn't too spicy for them but enough

Pork Medallions Smothered in a Mushroom and Shallot Gravy

I had a pork tenderloin and some cremini mushrooms in the refrigerator that needed to be cooked so I decided to combine the two to make this dish. I cut the tenderloin into medallions and simply seasoned them with sea salt, freshly cracked pepper, and garlic powder then cooked them in a bit of olive oil. I made a gravy in the same pan with a bit of butter, mushrooms, shallots, and chicken stock.

Shredded Pork and Caramelized Onion Tostada

I had leftover shredded pork from the enchiladas that I couldn't wait to use again. Did I happen to mention on the last post that this was the BEST shredded pork I have ever made? It was so tender, juicy, and flavorful - I couldn't get enough. Anyway, I decided to make a tostada for lunch using the shredded pork and caramelized onions. I loved the tender pork with the sweetened onions and crisp

Shredded Pork and Monterey Jack Cheese Enchiladas with Homemade Enchilada Sauce

I picked up a pork shoulder at the grocery store recently and decided to make a big batch of shredded pork. I simply seasoned it with sea salt, freshly cracked pepper, cumin, garlic powder, dried oregano, and coriander. I seared the meat on medium high heat then cooked it low and slow in the oven with some chicken broth, chopped garlic, chopped cilantro, and chopped Anaheim pepper for 6 hours,

Asian Style Pork Chops

I had some thick cut pork chops to use up so I went in search of a recipe online. I found this one at Life's Ambrosia that sounded simple and delicious. I adapted it just a bit by using fresh ginger, using a bit more soy sauce, using less sriracha (to make them kid friendly), and by cooking the meat in a grill pan instead of the oven. They turned out really tender, juicy, and flavorful. My whole

Pork and Mushroom Stew

When I saw a picture of this stew on the cover of Cuisine at Home I knew I would be making it immediately. I love pork with apples so I was excited to give this recipe a try. The magazine served the stew over apple-potato mash but I decided to just make regular mashed potatoes instead. The pork was extremely tender and the sauce was AMAZING.
