Scored Baby Potatoes AND Giveaway Winner!

My friend Currié recently made these potatoes for a birthday get together and I loved them. I decided to adapt them a bit by using small baby Dutch potatoes (my friend makes them with russet potatoes). I sliced them in half then scored the potato meat with a sharp knife. I seasoned each potato half with a bit of sea salt, freshly cracked pepper, paprika, garlic powder, and onion powder then baked

Mini Baked Potatoes

How cute are these little spuds? I had a few baby potatoes I needed to use up so I decided to roast them in a bit of olive oil, sea salt, freshly cracked pepper, and garlic powder. I topped them with a bit of sour cream and fresh chives right before serving. They were the perfect bite sized baked potato and a big hit with my family. Mediterranean Roasted Potato Salad AND the Giveaway Winners

I wanted to use up some fingerling potatoes and grape tomatoes I had on hand so I decided to make a Mediterranean potato salad.
